I love to cook.
I don’t know how much I love, in general, because I’ve always been told you shouldn’t love something that doesn’t love you back, and those calories don’t love me. However, I’ve had to learn to cook, otherwise starve, or just spend a lot of money eating out. My kids and wife will tell you I’m pretty good in the kitchen, and if they don’t, just ask me. I’m not a humble cook. When something tastes good that I’ve made, I’ll tell you.
One Sunday not long ago, I may have outdone myself. I came across a simple recipe for s’more brownies. And let me tell you, were they a hit.
All you’ll need is:
- 18 graham cracker halves
- 1 package of 9×13 chewy fudge brownie mix
- 1/4 cup water
- 2/3 cup vegetable oil
- 2 large eggs
- 2 cups semi-sweet chocolate chips
- 2 cups miniature marshmallows
Preheat oven to 350 degrees; line a 9×13″ baking pan with foil, spray foil with nonstick cooking spray. Line the bottom of the pan with 15 of the graham cracker halves, overlapping along the way. Break the remaining three graham crackers into pieces and set aside.
Combine brownie mix, water, oil and eggs into mixing bowl and blend until smooth. Add 1 cup of chocolate chips and mix. Spread over graham crackers on bottom of pan.
Bake for 25-30 minutes.
Sprinkle remaining graham crackers and marshmallows on top. Preheat broiler to low and add to top rack for 45 seconds. Be careful not to overcook marshmallows. Immediately sprinkle with the rest of the chocolate chips after removing from broiler.
After cooling for at least an hour, remove the entire pan and cut into bars using a wet knife. Store in container with lid.
